Description Join our Ladies & Gentlemen: Chef de Partie (In-Room Dining)
At The Ritz-Carlton, Melbourne, we create moments of genuine connection and deliver the finest in-room dining experiences - 24 hours a day. We're seeking a passionate Chef de Partie who thrives in a refined, fast-paced environment and is committed to delivering excellence within IRD team.

What we’re looking for:
- This is a full-time role
- A qualified Chef with a Certificate III in Commercial Cookery (or equivalent)
- Experience in similar role, in luxury hotels or high-end dining environments
- Confidence working independently and as part of a collaborative kitchen team
- Flexibility to work across rotating rosters including mornings, evenings, weekends, and public holidays
Your responsibilities:
- Prepare and execute à la carte dishes to order for in-room dining, ensuring consistency, quality, and presentation meet luxury standards
- Maintain high levels of efficiency to deliver timely room service orders, especially during peak periods
- Monitor and manage mise en place for In-Room Dining throughout all meal periods – breakfast, lunch, dinner, late night
- Uphold HACCP and food safety standards in all preparation and service areas
- Liaise closely with IRD service team to ensure special requests and dietary needs are met seamlessly
- Ensure accuracy in portioning, plating, and garnishing across varied menus
- Replenish stock and support ordering needs specific to In-Room Dining pantry and satellite kitchens
- Maintain cleanliness and organisation of the In-Room Dining kitchen zone at all times
- Assist in creating and testing new in-room dining menu items in collaboration with senior chefs
- Guide and support junior team members in daily operations, acting as a role model of professionalism and pace
- Uphold The Ritz-Carlton standards in every dish served, with care for detail and a passion for service
